Ingredients
Chocolate Chia Pudding
- 20 grams Rapadura Sugar
- 5 grams cacao powder
- 100 grams white chia seeds
- 375 grams Milk, Cashew, Almond, Non-Homogenised
- 35 grams frozen raspberries
- 1 teaspoon vanilla extract, Queens Vanilla Paste is ideal
Berry Coulis
- Juice of half a Navel Orange
- 3-4 Strips of Orange Rind, no pith
- 25 grams raw sugar
- 300 grams frozen raspberries
- 200 grams strawberries, hulled
- 1/2 tbsp Strawberry Vino Cotto

Place Cacao powder and sugar into TM bowl. Pulverise speed 9, 3 secs
Scrape down sides of TM, add chia seeds, milk, berries and vanilla extract/paste. Mix speed 1, 10 secs, Reverse
Place the mixture into a bowl, give a last minute stir using the TM spatula to make sure the frozen berries have not stuck together and that all the ingredients are well mixed. Cover and refrigerate overnight
Place in TM bowl juice of orange, rind and sugar. Blend speed 9, 6 secs
Add raspberries, strawberries and Vino Cotto, pulverise speed 10, 20 secs
Sieve coulis to remove raspeberry seeds
Pudding - refrigerate for at least 2 hours
Berry Coulis
Tip
Make this pudding dairy free by replacing cow's or goat's milk with nut milk, such as cashew or almond milk made in the TM
Chia seeds absorb water or milk approximately 1 part chia to 9 parts of liquid. This recipe can be adjusted using this ratio to make a larger quantity
Ideal breakfast pudding if served layered with yogurt, berry coulis, additional strawberries, some orange sugar and a breakfast seed mix such as sunflower seeds, slivered almonds and pistachios
Rapadura sugar is a less refined, less sweet sugar that is available in health food shops and larger Woolworths
Cacao powder is the sister to Cocoa powder. Cocoa powder is heated to a very high temperature, stripped of all its nutritional value and then artifically sweetened. Cacao is readily available in health food shops or online organic merchants
