  • 500 grams Desiccated or shredded Coconut
  • 45 grams Organic Cacao
  • 150 grams organic Maple Syrup
  • 1/2 level tsp vanilla essence / extract
  • 40 grams coconut oil

Recipe's preparation

    Chocolate Coconut Fudge (Paleo)
  1. Place coconut into bowl and 50degrees/sp 9/3 mins and stop halfway and scrape down sides (heat is optional i find it just makes the coconut a bit creamier). 

    Add Cacao and sp5/20 seconds

    Add maple syrup (or honey), Vanilla extract and coconut oil and sp6/30 seconds and scrape sides halfway. 

    Using spatula pour into a baking paper lined slice tray and smooth out and refridgerate to set. cut into 50 portions. 

     

    ***coconut  oil is optional I just find it makes the fudge harder which I like. 

     

    *** if cut into 50 pieces, each piece is approx 90 cal with coconut oil. 

Tip

Add cacao nibs or shredded coconut or chopped nuts for a different taste and texture

    I followed this recipe to a tee and was very dry so I added more coconut oil and still dry. i cannot understand why it didn't work and it did for everyone else??? Are the measurements right? Very disappointed! tmrc_emoticons.((

    Very nice. I added a little extra coconut oil as I found it quite thick with original recipe.

    Yummo, As i was cooking i realised i didnt have enough coconut so i used 300gms of almonds to make it up , but yeah really nice !!

    Absolutely incredible! Taste even better than chocolate crackles! I put mine into 4 x ice cube trays which made 56 pieces - LOVE LOVE LOVE! Thank-you tmrc_emoticons.)

    Have tried other recipes which are essentially the same - but this is great - measurements all work perfectly (although I used less sweetner) and much easier than having to spend hours squishing them all into balls...
