Ingredients

Creme L'Orange (Orange Custard)

  • Zest 1 orange, (from 800g below)
  • 60 g raw sugar, or to taste
  • 800 g blood, navel or valencia oranges, peeled, segmented (500g approx)
  • 20 g cornflour, wheat free
  • 2 eggs

Recipe's preparation

    Creme L'Orange (Orange Custard)
  1. 1.  Wash, dry and peel oranges.  Peel zest as thinly as possible from one of the oranges. 

     Peel and segment all of the oranges, over a bowl to catch any juice.

    2.  Place orange zest and raw sugar into TM bowl and mill for 10 seconds on speed 10. 

    Scrape down with spatula.  

    3.  Weigh prepared orange segments and juice into TM bowl and process for 20 seconds on speed 8.

    4.   Add cornflour and eggs,  and whisk to for 10 seconds on speed 4.

    5.  Cook for 7 minutes at 90 degrees on speed 2 or until mixture coats  the back of the spatula.

    6.  For smoothest possible result, gradually blend up to speed 10 for 20 seconds.

    7.  Pour into serving jug immediately.

Tip

There are alternatives when making this recipe:

 1.    Process the oranges at step 3 strain and use only the juice.

You will need to set aside the sugar mix after milling, and add it back to the TM bowl with the cornflour

3.  Use 100% orange juice.

This recipe is Lactose and gluten free.

Variation:  Jaffa Custard:  Add 20g cocoa with the cornflour

    Hope you have success with the recipe and enjoy it as much as we do.  I simply had an over abundance of oranges and thinking that orange juice would curdle the milk, opted to use the orange juice in place of the milk.  It has the added advantage of being acceptable for those with a lactose intolerance.
