Lemon butter
- 500 grams raw sugar
- 2 lemons, Rind removed with a peeler
- 6 eggs, I use organic free range
- 3-4 Lemons juiced, 3 large or 4 small
- 120 grams Butter (unsalted)

This is a family favourite that I have converted to cook in the TM.
Add sugar and lemon rind to TM. Blend for 10 seconds on speed 8. Remove. Add the eggs to the TM and beat for 10 seconds on speed 4. Strain and discard the froth. Place all the ingredients into the TM and blend for 10 seconds on speed 5. Heat on 80 degrees for 15 mins speed 3. Place into clean, sterilised jars. Refrigerate when cool. Avoid eating when on a diet.

This is delicious, I have always resisted making lemon butter, thinking it was too hard. Not any more! We made two batches and changed the second recipe slightly as we like it really lemony. We just took the rind and pith off two lemons and blitzed the whole lemon and then the juice of two more, plus the rind of the first two. Thanks for the recipe!
Hi, can you use just egg yolks or do you need the whole egg? Going to make a pav and will have yolks to use up! Thanks
