Ingredients

  • 200 grams rolled oats
  • 6 dates
  • 150 grams mixed dried fruits (sultanas, cranberries, apricots)
  • 85 grams raw almonds
  • 2 tbsp raw cacao powder or carob or cocoa
  • 2 tbsp chia seeds
  • 1 tbsp vanilla essence
  • 2 tbsp hot water

Recipe's preparation

  1. Place all ingredients into mixing bowl and mix 10-30 sec/speed 10 until the mixture resembles fine breadcrumbs.

    Using your hands, mould the mixture into balls.  If the mixture is too dry, add additional vanilla essence or water.

    You may wish to roll the balls in a selection of desiccated coconut, sesame seeds, chia seeds etc.

    Refrigerate for 30 minutes before serving.

    Hedgehogs can be stored in the fridge for up to 3 weeks.

    * What are Chia Seeds?

    Harvested from the salvia Hispanica plant, which is a type of sage in the family of mint, chia seeds are high in Omega-3 fatty acids. It has been the staple food of the ancient Aztec and now they are commercially grown in Argentina, Bolivia, Ecuador, Guatemala and Mexico. Recently it has become very famous and often called super food which has many dietary benefits. It helps your body to retain liquid content and electrolytes and forms a gel in your stomach. This gel slows the conversion of carbohydrates to sugar in your body. Tip

You can add sunflower seeds and pepitas for added nutrient content.  Likewise, your preferred dried fruit to the recipe.  For Gluten Free option replace rolled oats with millet flour (milled in the Thermomix).  You may also like to use 100g rolled oats and 100g rolled barley.

    These are a great healthy treat. I ended up using more Vanilla essence and might try with protein powder instead of cocoa next time to increase the protein. Yummy easy snack. Thanks.  tmrc_emoticons.)
