Ingredients

Fruit

  • 8 yellow nectarines
  • 100 g raspberries, frozen
  • 2 tbsp plain flour
  • 5 tbsp sugar
  • 1 tbsp lemon juice
  • cinnamon sugar

Crumble

  • 140 g SR flour
  • 125 g raw sugar
  • 1/4 tsp salt
  • 60 g Butter
  • 1/2 tsp vanilla
  • 1 tablespoon approx, milk

Recipe's preparation

  1.  

    Slice nectarines and place in a bowl with raspberries. Toss through lemon juice. Mix flour and sugar then toss through fruit. Place in a greased baking dish.

     

    Sprinkle cinnamon sugar liberally over fruit.

     

    Measure SR flour, sugar & salt into Thermomix. Whizz briefly to mix. Add butter and mix on 8 approx 15 seconds or until resembles breadcrumbs. Add vanilla and just enough milk until starts holding together in small clumps.

     

    Sprinkle topping over fruit and bake 180degC until golden and bubbling.

     

    Serve with custard and/or ice cream. Delicious!

Tip

Peaches and other stone fruit can be substituted too!

 

Cinnamon sugar - 1 tsp cinnamon mixed with 4 Tbs castor sugar

    ddiac:Hello, it would have been too sweet as you didn't have the raspberries - their tartness cuts through the sweetness of the nectarines.

    This was so incredibly easy to make and absolutely stunning. I've made the same recipe without the raspberries a few times now and it's delicious! Also done with apple and rhubarb also!

    Very easy, tasty. Didn't have raspberries but worked fine without it. Too sweet, next time I'll cut down on the sugar.

    Great recipe but could use a few tweaks: measurement for how much milk to use. Thankfully mine came out ok but would be better to have this quantified so ppl aren't likely to stuff it up. Also, how long to whizz to mix dry ingredients and also, how to make cinnamon sugar (& measurements). I didn't end up making it, just sprinkled both cinnamon and sugar over the fruit once done.
