  • 2 buttercakes, loaf
  • 250 g light Philly cheese
  • 150 g thickened cream
  • 120 g castor sugar
  • 1 tsp vanilla essence
  • 2 tbsp lemon juice

  • 50 g fruit liquor, eg. Kirsch, strawberry
  • 12 strawberries

Recipe's preparation

    Cream filling
  1. Place philly cheese in TM bowl. Mix on 3 for approx 2 minutes or until smooth and creamy. Add sugar, mix for another 1 minute or until incorporated. Insert butterfly, add cream, vanilla and lemon juice. Mix on speed 3-4 for approx 2 minutes or until smooth, creamy, and has increased in volume. 

  2. Assembling
  3. Slice cake into 1cm slices, you will get about 13 slices from a storebought buttercake. Cut out a 7cm round from each slice using a cookie/scone cutter. Dab liquor onto top of each round with pastry brush. Slice a strawberry into thin rounds, place slices on top of a round of cake. Drop a spoonful of cream mixture onto strawberries. Top with the second piece of cake, liquor side down. Top with more cream and decorate with a strawberry cut in half. Continue with remaining cake rounds.

Tip

I used a storebought buttercake - makes it SO easy! You could make your own buttercake, or a sheet cake if you want.
