No Bake Cashew, Coconut & Vanilla Bars
- 1/2 cup Desiccated Coconut
- 1 cup Cashews
- 1 cup Pitted Dates
- 2 Tbsp Coconut Oil
- 40g Cacao Powder
- 1 Tsp Vanilla Powder

Place Cashews in TM bowl and blitz for approx 5 sec speed 7. You will know when the sound changes that they're done.
Add all other ingredients and mix on speed 5 for about 10 seconds until all ingredients are well combined.
Pour into a 20 x 20 cm square slice tin and flatten firmly using the back of a spoon or your fingers.
Place into the freezer for approx 1/2 hour.
Remove from freezer and cut into bar sized pieces, store in a container in the fridge.
Tip
Hide these from the hubby and kids, they will disappear quickly!!!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Terrific, healthy treat. My only suggestion would be to line your tin with cling film to stop it sticking. Also I used a fresh vanilla bean for a little extra oomph.
