Pumpkin Pie
- 1 batch TMX Short Crust pastry, (Everyday Cook Book)
- 450 grams cooked pumpkin
- 125 grams Rapadura Sugar
- 0.5 teaspoon ground cinnamon
- 0.5 teaspoon ground ginger
- 0.5 teaspoon mixed spice
- 3 eggs
- 150 grams pure cream
- whipped cream, to serve

Preheat oven to 190C.
Roll out and line 25cm pie dish with prepared pastry.Prick the base several times with a fork.Cover loosely with baking paper and blind bake for 10 minutes.
Place remaining ingredients in TM bowl.Blend for 20 sec on Speed 5 until smooth.
Pour mixture into prepared pastry crust.Bake for 45 mins until set.
Serve chilled with whipped cream.

I love the simplicity of this recipe. I had some left over pumpkin which I was intending to use for soup but made this instead. It is winter here in Australia and this reminds me so much of Fall at home (NY). Thank you for sharing. Note - I did need to cook about 15 minutes longer than the recipe suggested. I am not sure if it is my new oven (900mm) or my eggs were not fresh enough. Either way. Great recipe.

This has become my go to recipe for desert pie
Always wanted to try pumpkin pie , my son loves it because he's never eaten pumpkin in its typical savoury state and its nice but I cant get past the weirdness of it being sweet and kind of custardy, yet a veggie at the same time. I found that mine needed to go back in the oven for an extra 15 mins to firm up. Thank you

Yum yum yum, the only thing I did different was roast my pumpkin with a little bit of maple syrup drizzled over the top. Great recipe & so easy.
I would try the coconut cream ... Coconut pumpkin pie sounds like a nice combination ... I wouldn't use the sour cream though.
