Ingredients

Raw Chocolate

  • 100 g raw cacoa butter
  • 35 g raw cacoa powder
  • 45 g Maple syrup
  • pinch good quality salt, Himalayan or celtic

optional extras

  • 30 g dried fruit eg cranberries, incaberries, sultanas etc
  • 10 g nuts eg cashews, macadamias

Recipe's preparation

    Raw Chocolate
  1. Place cacao butter into TM bowl and chop for 5 seconds on speed 8.

    Melt for 10 minutes at 37C, speed 2. Scrape down the sides and blades halfway through. If not completely liquid melt for another 2-3 minutes at 37C, speed 2.

    Add remaining ingredients and mix for 1 minute at 37C, speed 2.

    Pour the chocolate onto a thermomat or into small silicone moulds. Sprinkle with fruit and nuts if using and leave to set or refridgerate for 30-40minutes. Break into pieces and enjoy.

Tip

Add chopped nuts and dried fruits for a delicious variation.

When using fruit and nuts in a mould, put the fruit and nuts in first then pour the chocolate over the top.

While not the cheapest chocolate you will ever eat, it is the most delicious and nutritious! Adapted from a recipe by Danielle O'Donoghue.

    This is absolutely delicious. I am demonstrating how to make this at our Christmas Spectacular - will just pour it over peanuts to make chocolate peanut bark. On my practice run I added 60g syrup (by mistake - it came out of bottle too quickly!) but wasn't too sweet. Great way to get our antioxidants!

    Loved it, easy to make. Put in metal mould so little hard to get our, had to use hot water. Accidentally added mixed fruit in the second stage. Still tasted great!

    This is amazing. I made chocolate coated grapes, peppermint and chocolate activated almonds. Instructions were so very helpful. Yum yum yum. I used milled rapadura sugar as I had no maple syrup and really wanted a sugar hit!

    Very tasty and so easy to make! 

    I also added a bit of extra maple syrup, and sprinkled sliced almonds over the top before setting, the whole family enjoyed a piece, or three  Big Smile

    I love this recipe ....I too add more maple syrup 70g and use mixed salted nuts.  Love

    Thank you for this recipe .  I have been adding more maple syrup than you suggested.  I also use salted nuts as well as a pinch of pink salt flakes.   tmrc_emoticons.).  We love it !

    Very easy & tasty recipe.

    I used macadamias & goji berries the first time I made this & walnuts & sultanas the second time. The extra sweetness of the sultanas made a great addition.
