Ingredients

Raw Raspberry Slice

Base

  • 3/4 --- Cup of whole Almond/Slivered Almond
  • 10 raw pitted dates
  • 1 1/4 tablespoons raw cacao powder
  • 2 1/2 tablespoons nut butter/almond/peanut
  • 1 tablespoons honey/maple

Raspberry Filling

  • 1 --- cup raw cashews, (soaked for 1 hr and drained)
  • 250 g Fresh Raspberries
  • 1/2 Cup desiccated coconut
  • 2/3 Cup Coconut oil
  • 1/2 Cup Honey

Chocolate Topping

  • 1/4 Cup Coconut oil, melted
  • 1/3 Cup Cacao Powder sifted..
  • 2 tablespoons Maple Syrup, pure

Recipe's preparation

    Base
  1. Line Square tin with Baking paper ( I used 20 x 20 cm tin)

  2. add 3/4 Cup of Almonds Blend"Blend" 6-8 sec/ sp 7

  3. add 10 dates, 1 1/4 tbsp cacao powder, 2 1/2 tbsp nut butter ( I used Peanut butter), 1 tbsp Honey Blend"Blend" 30 sec / sp 8

  4. spread mixture evenly into prepared tin, smooth it out pushing down flat and smooth surface ( use another piece of baking paper on top helps to smooth the surface) Refridgerate

  5. Raspberry Filling
  6. add 1 Cup cashews Blend"Blend" 2 mins/ sp 6, if cashews have not been soaked blend for 7 minutes ( til fine paste like consistence)

  7. add remaining ingredients, 250 gms fresh raspberries, 1/2 cup desicated coconut, 2/3 cups coconut oil, 1/2 cup honey Blend"Blend" 2 mins/sp 8 until slightly creamy and almost smooth

  8. pour over base and return to fridge 20 minutes

  9. Chocolate topping
  10. this can be done in microwave or Thermomix

    if using microwave melt 1/4 cups coconut oil, add 1/3 cup Cacao powder sifted and 2 tbsp maple syrup, mix with a spoon till smooth and well incorporated, if using TMX see next step

  11. melt coconut oil if thick Blend"Blend" 1 minute/temp 37/ sp 1

  12. add Cacao powder and Maple syrup Blend"Blend" 10 secs/ speed 3

  13. pour over cold slice, spread it quickly and evenly , this topping will set quickly depending on how cold the filling is.

  14. once set cut slice into small pieces as it is very rich. store in the fridge for a treat

Tip

This slice is best kept in the fridge
if you don't have time to soak cashews, blend for 7minutes instead of 2 mins see notes in recipe
Chocolate topping can be preppared with a microwave
