Ingredients

Base

  • 100 grams Raw almonds, skin on
  • 100 grams raw walnuts
  • 12 medjool dates pitted
  • pinch pink salt

Middle Layer

  • 200 grams Cashews, raw
  • 2 heaped tablespoons cold pressed coconut oil
  • 2 heaped tablespoons Raw Honey
  • 1 pinch vanilla beans

Top

  • 150/200 grams blueberries, fresh or frozen

Optional

  • tablespoon dessicated coconut, to sprinkle on top

Recipe's preparation

  1. Process the base ingredients on speed 10 until the ingredients come together and the oils seperate from the nuts.  When it's ready press it into the bottom of a slice tin.

     

    Process the middle layer on speed 10 until it's thick and creamy.  Spread it over the base.

     

    Process the blueberries until smooth.  If they are frozen they're easir to work with and won't actually become smooth but rather like a slushy.

    OPTIONAL

    Sprinkle some dessicated coconut on top.

     

    Put the slice in the freezer.  Leave on the bench for 15 minutes before cutting and serving.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
