  • 1/2 cup boiling water
  • 500 g cream cheese
  • 3/4 cup caster sugar
  • 150 g Tolberone
  • 1/2 cup cream
  • 125 g Choc Ripple Biscuits

Recipe's preparation

  1. Place choc biscuits in thermomix bowl and chop for 6 seconds on speed 5 and remove and reserve

  2. Weigh butter in bowl and melt for 2 minutes on 70 degrees for speed 2

  3. Add reserved biscuits and mix 10 seconds Counter-clockwise operation"Counter-clockwise operation" on speed 2

  4. Scrape down sides and transfer to a greesed and lined springform pan. Press down biscuits to cover base of pan and place in fridge to set and clean out bowl

  5. Place gelatine in small jug and cover with boiling water and wisk till disolved

  6. Place cream cheese in bowl and beat for 1.5 minutes on speed 4, then add sugar and beat again for 1 minute on speed 3. Next add your gelatine mixture and beat for 1 minute on speed 3 and remove from bowl and reserve.

  7. Add chocolate to bowl and melt for 5 minutes on 80 degreed on speed 1

  8. Once chocolate has melted add back in the cream cheese mixture and also the cream and mix for 30 seconds on speed 10 (or longer if needed and all combined)

  9. Pour mixture over base and place in the freezer until set (preferably overnight)

Tip

Cheesecake can be served with either shaved chocolate, berried or cream or anything else that you may think of

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
