Ingredients

Base

  • 150 g plain flour
  • 40 g dessicated coconut
  • 90 g brown sugar
  • 125 g Butter

Caramel Filling

  • 115 g golden syrup
  • 125 g Butter
  • 2x395 g cans sweetened condensed milk

Chocolate Topping

  • 200 g dark chocolate
  • 1 tablespoon vegetable or macadamia nut oil

Recipe's preparation

    Base
  1. Preheat oven to 180◦C (350◦F)

    Melt butter 2-3 minutes at 70◦C on speed 2.

    Add remaining ingredients and mix slowly up to speed 4 for 20-30 seconds.  Stop to scrape down the sides if required.

    Press into the base of a lightly greased 20x30cm tin lined with non-stick baking paper and bake for 20-25 minutes or until golden brown.  Allow to cool slightly.

  2. Caramel Filling
  3. While the base is cooking, make the caramel filling.  Place caramel filling ingredients into TM bowl. With MC in place heat 8 minutes at 70C on speed 3.
    Pour over the cooked base and bake for 20 minutes or until golden.
    Refrigerate until cold.

  4. Chocolate Topping
  5. Place the chocolate into TM bowl and grate for 5-10 seconds on speed 8.
    Melt for 2 minutes on 50◦C on speed 3.
    Pour over caramel mixture and refrigerate for 30 minutes or until firm.

Tip

When cutting slices, dip your knife into hot water and dry with a tea towel before slicing.  This ensures a clean cut and neat slices.

    Absolutely love this recipe. Have been making it regularly for a couple of years now. Always turns out perfect. I follow a tip I read in comments to do caramel at 80C for 9 mins (darker)

    Absolutely wonderful! Switched out the flour for Gluten free flour, made the condensed milk from scratch and only used 1 portion of condensed milk.

    I’ve made this 7-8 times now and it never disappoints. I enjoy sharing it around as the feedback is always great and i keep getting asked to make it again. The only change I make is we only use 1 lot of condensed milk. A small issue with this recipe is not being able to stop at one piece 😋

    Fantastic!
    My guests loved it.
    Recipe worked a treat.

    Used GF flour.
    Half dark and half milk choc for topping.

    Made caramel milk and chocolate milk when washing out bowl. Yum.
