Recipe's preparation

  1. Place sugar in TMX bowl, and grind on speed 9 for 5 seconds. Add remaining ingredients and cook on 80 degrees for 15 minutes at speed 4. Increase temperature to 100 degrees and cook for 7 minutes at speed 4.

    Line a square tin with baking paper or foil, so that it extends up all four sides of the tin.  Place your lattice biscuits to fit the bottom of the tin.  Pour custard over biscuits, spreading it out nice and smooth. Layer more lattice biscuits over the top of the custard (you can pop it in the freezer for the first 30-40 minutes to speed up the chilling process but don't forget to take it out and place in the fridge.)

    Once cooled, spread top of slice with icing of your choice!

Tip

I made this before bed and let it set overnight and iced it in the morning

    Great recipe. I have substituted the lattice biscuits with cooked puff pastry. Remember to cover the pastry in fork holes before cooking in 200degree oven for 10-12 minutes.

    Decided to give these a try because they look just like my old recipe!

    Just made and it has come together wonderfully! Somehow my lattice biscuits are different sizes but once I poured the custardy filling it had already started to set before I placed the second lot on top (I'm not sure why there were concerns with floating biscuits/not setting).

    Can't wait until icing and slicing for morning tea tomorrow (the bf loved cleaning the bowl out too)!

    I probably won't make again. Not based on taste,  the biscuits floated to the top once the custard was poured on top. More like nice vanilla slice pudding

    I made these yesterday and doubted that they would set properly but today after 12 hrs in the fridge they are perfect...this is one recipe I will be keeping and using again
