Recipe's preparation

  1. Place white chocolate and sugar into mixing bowl and mill 10 sec/speed 9. Transfer into a bowl and set aside.
  2. Place rice, coconut ilk, and 350g of the full cream milk into mixing bowl and cook 23-25 min/90°C/Counter-clockwise operation"Counter-clockwise operation" /speed 1.5, or until rice is tender.
  3. Add eggs, reserved chocolate sugar and remaining 30-50g of the full cream milk (depending on the desired thickness of your rice pudding) and combine 5 min/Counter-clockwise operation"Counter-clockwise operation" /speed 3.
  4. Transfer into a thermal serving bowl or other large bowl and cover to keep warm. Allow to rest for a minimum of 5 minutes. Divide between 6 serving bowls, garnish with blackberries and serve immediately.

Tip

- For a thicker pudding, use 30g milk in step 3, for a thinner rice pudding, use 50g milk.

- If fresh blackberries are not in season, use thawed frozen blackberries or fresh berries of your choice.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).     My rice was still hard after 25 minutes. I cooked it for another 40 minutes but it didnt change. So strange

    This White Chocolate and Coconut Rice Pudding is super tasty.

    I found it a bit too sweet (I know, right?), so I'd probably half the sugar or even omit it next time.

    I only had skim milk, and it worked out fine.
