  • 40 gram lemon, approximately
  • 1000 grams water
  • 1 bottle sparkling wine, 500 for the recipe and 250 is to enjoy while waiting

Recipe's preparation

  1. Weight sugar into bowl and mill
    If lemon is a seedless, thin skinned and with very little pith; add to the bowl and mill again

    Add the water and disolve sugar

    Allow to cool, add sparkling wine (can substitute with wine or cider) and mix together

    Pour into ice cube trays and put into freezer until mushy

    Return to bowl and beat well to break down ice crystals

    Return to freezer until firm

    Take out of freezer and into fridge for about 20 minutes before serving to allow to soften

Tip

Use sparkling red wine for a fabulous look
