Ingredients

Spice Mix

  • 2 tsp chilli, dried, hot
  • 2 tsp cumin seeds
  • 2 tsp garam masala, pre prepared - of course!
  • 2 tsp pepper, ground, I use whole peppercorns
  • 1 cinnamon quill, about 6-8 cm
  • 1 bay leaf
  • 2 tsp turmeric, fresh, or dried and ground
  • 2 tsp ginger, stem, or dried and ground
  • 2 tsp fenugreek
  • 2 tsp cardamom pod

Let's Cook the Vindaloo

  • 1000 g Beef, gravy cut in 4cm cubes
  • 2 tbsp lemon juice, or a small lemon peeled and pith removed
  • 20 g oil
  • 180 g onion
  • 5 cloves garlic
  • 180 g tomatoes, roughly chopped
  • 2 chilli, fresh, long green
  • 100 g apple cider, vinegar

Recipe's preparation

    Make the Spice Mix
  1. All into the bowl and mill until as course or fine as you desire.

    If using dried and already ground spices, add last

    I do large batches and save in a glass jar labelled "Vindaloo Spice Mix - 20g per recipe".

    Remember, it is your recipe so use more; use less - simply enjoy!

  2. Cook the Vindaloo
  3. Put the 1kg of meat into a ceramic or glass bowl and mix with the spice mix, lemon juice to sit for an hour or overnight.
    Add onion and garlic to bowl chop before adding oil and saute. 3 minutes/98°C/speed 3.
    Add beef and cook on 8-10 minutes/Varoma/Counter-clockwise operation"Counter-clockwise operation" 2/
    Now add the tomatoes chillies and vinegar.
    Remove Measuring Cup and continue to cook 30 minutes/Varoma/2/

    Extend time for thicker sauce.

    Season with salt and pepper and serve with tomato sambal (search my recipe)
