Recipe's preparation

    Charlene's frozen Lychee Champagne mojito's
  1. 1. Add zest of one lime, 1/2 the mint and sugar into mixing bowl and mill 30 sec/speed 10.

    2.  Add ice, juice of the lime and whole tin of lychees (including the juice) into the bowl and mill 15 sec/speed 9.

    3.  Set blades rotating on speed 4/5 so cocktail is gently tunnelling through then add bottle of champagne through the lid while the blades are rotating. Adjust speed to ensure cocktail is just gentle tunnelling through to combine the champagne without creating bubbles

    4.  Fill tall glasses with ice and mint leaves to decorate and pour mojito into the glasses and serve immediately.

Tip

You can replace the champagne with bicardi or vodka and some soda water if warranted. This COCKTAIL is a crowd pleaser and so easy and delicious to make!

if you like a chunkier mojito just peel in your lime in step 1 rather than zest

Adjust mint to taste
