Ingredients
Chilli & Kaffir Fish and Prawns
- 2 cloves garlic, peeled
- 1 onion, halved
- 1 birds eye chilli, or to taste
- 50 g oil
- 4 Firm White Fish Fillets
- 8 Prawns, peeled
- 2 kaffir lime leaves, finely cut
Coconut Lime Rice
- 3cm ginger root
- Small handful coriander, or to taste
- 400g coconut cream
- 1/2 teaspoon salt
- 350g white rice
- 400g water
- 2 kaffir lime leaves, finely cut
Garnish Salad
- 1 tomato, seeds removed and finely sliced
- 1/3 continental cucumber, sliced finely
- Juice of one lime
- 1 tablespoon olive oil
- Salt and Pepper - To Taste
- 1 pinch sugar
To Serve
- 4 baby potatos, sliced very very finely
- Handful coriander
- 1 Bird eye Chilli, or to taste
- 1 tablespoon sugar
- Pinch of Salt, to taste

Prepping Seafood
1) Chop Garlic, Onion and Chilli for 3secs/Sp5.
2) Scrape down bowl. Add Oil. Sauté Varoma/4mins/Sp1 MC Off.
3) Line the bottom of Varoma with baking paper.
4) Rub 1-2Tbsp Garlic mix and kaffir lime leaves onto seafood.
5) Place a couple of fillets and four prawns into the varoma and insert tray. Set Varoma aside.
Lets Get Cooking
1) Add Ginger, Coriander, Salt and Coconut into TM Bowl and blend 20secs/Sp9.
2) Place Rice into Basket and place in TM. Add water.
3) Sprinkle Kaffir over rice and place Varoma on.
4) Cook Varoma/16mins/Sp4.
Plating Up
1) Cook potato slices (rubbed with a lug of olive oil) in a hot 200 degree oven. Keep watch, so they dont burn
2) Make the Garnish Salad by mixing all ingredients together. The taste should be sweet and sour
3) Once the Rice and Seafood are cooked, remove the rice and carefully pour the juices from the seafood into TM Bowl. Add the Coriander, Chilli, Sugar and Salt. Blend for 1min/Sp9.
4) Plate up as per recipe photo, including the scattered potato crisps

Im so sorry I missed your comment. The Varoma and Insert Tray should have 2 fish fillets and 4 prawns each. Or all the prawns can be placed on the tray.

Lovely. Have enjoyed this twice now. Tonight halved ingredients, used coconut sugar, and used brown rice for two people ( cooked rice for 3 extra minutes). Tasty, healthy and successful . Thank you.

I'm thinking of making this tonight - it looks and sounds so yummy! When do you put the rest of the seafood in? I'm not sure why only 4 prawns go in when the recipe calls for 8? Thanks!
