Ingredients

  • 1 Carrot (or equivalent celery)
  • 1 onion
  • 20 g Butter
  • 4 slices bread (or equivalent of bread crumbs)
  • 100 g Nuts
  • 1 orange
  • 2 fish fillets

Cranberry Sauce

  • 100 g sugar
  • 125 g cranberry juice
  • 1 orange
  • 250 g dried cranberries
  • 1 knob of fresh ginger
  • 1 tsp cinnamon
  • 1 tsp all spice

Recipe's preparation

    Fish
  1. if using bread, put in jug and turn into bread crumbs (7s speed 7)

    Use a vegetable peeler to remove peel (but not pit) from one of the oranges.  Put in jug and chop 10s speed 9.

    Peel and cut carrot and onion in to pieces.  Place in jug and chop 7s speed 7.

    Add 20g of the butter and the nuts.  Saute 2 minutes varoma speed 2.

    Add juice from orange  and mix thoroughly (7s, speed 5)

    Prepare an oven tray with a sheet of baking paper.  Lay fish fillets on paper and top with mixture.  Bake in oven at 180 degrees for approximately 25-30 minutes.

  2. Cranberry Sauce
  3. Using vegetable peeler, remove the peel of the orange (avoiding the pith) and place in jug.  Cut a thumb size knob of ginger and add to jug.  Chop 7s speed 7.  Check it is finely chopped.

    Add all other ingredients, including the juilce of the orange.  Cook at 80 degrees on reverse speed 2 until the mixture has reduced.  Pour into a sterilsed jar if you are planning to keep the leftovers for more than a few days.

  5. Cut a selection of vegetables into pieces and steam in the varoma while the fish is cooking (approximately 10-15 minutes varoma speed 2).

Tip

Make the cranberry sauce before starting the fish.

The cranberry sauce recipe is on the TM website, but I was unable to find the exact one that I had used some weeks ago. I would recommend that you look for a recipe that works for you, but this is my approximation of the other recipe.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities.
