Ingredients

CHERMOULA

  • 1 teaspoon cummin seeds
  • 4 large pieces of garlic
  • 2 Red Chillis
  • 1/2 teaspoon pepper
  • 3 small Red Onions
  • 1/4 cup flat leaf parsley, leaves only
  • 1/2 cup corriander leaves
  • rind of 1/2 a preserved lemon, (available from delis)
  • 100 g olive oils

Salmon

  • 800g g skinless salmon fillets, (150-200g pieces)
  • 500 g water
  • 800 g mashing potatoes
  • 1 bunch spinach, fresh
  • 50 g Butter
  • pinch nutmeg ground
  • Salt and pepper
  • 40 g Butter
  • 60 g Milk

Recipe's preparation

    Chermoula
  1. 1. Place cummin, garlic, chillis and pepper in mixing bowl.  Chop 3 seconds, speed 9

  2. 2. Add onions, parsley, corriander, mint, preserved lemon and olive oil. Chop 3 seconds, speed 5

  3. 3. Set Chermoula aside and wash and dry mixing bowl. 

  4. Salmon
  5. 1. Take a small piece of baking paper and wet it, scrunch it up and lay it out on the Varoma tray. Put a layer of chermoula all over the paper.  Take care to ensure there are some air vents left free to cook the salmon. 

  6. 2. Place salmon fillets on the chermoula and cover with more chermoula.  Place lid on the Varoma and allow salmon to marinate at room temperature while you peel and chop the potatoes. 

  7. 3. Add 500g water to the mixing bowl, place simmering basket in mixing bowl.  Put peeled and chopped potatoes into simmering basket. Cook for 5 minutes, Varoma, speed 1.

  8. 4. Place Varoma with salmon on mixing bowl and cook for 10 minutes, Varoma, speed 1.

  9. 5. Take a small bunch of spinach and wash and roughly chop.  Place spinach into Varoma dish and cook a futher 5 minutes ,Varoma, speed 1.

     

  10. 6. Remove spinach and continue to cook salmon and potatoes for a futher 4 minutes, Varoma, speed 1.

  11. 7. Squeeze excess water from spinach.  Heat 50g of butter in a pan, add spinach, salt, pepper and nutmed. Heat spinach for 2-3 minutes. 

  12. 8. Check salmon is cooked.  Set aside in a thermoserver with spinach.

  13. 9. Remove the simmering basket and tip water out of mixing bowl. Place butterfly in mixing bowl and add potatoes, 40g of butter, milk and salt and pepper.  Whip for 30 seconds, speed 3.

  14. 10. Serve potato, topped with spinach and then salmon.

    The flavours in this were AWESOME!!!

    As I went along I needed to make a Few adjustments;

    As previously noted, mint isn't mentioned in the ingredients list, I went with about half a cup which seemed to word well (it would be great if the OP could edit to add this in).

    The whole spinach things is made far more complicated than necessary, I used the washed & bagged type spinach and simply pan cooked this in the butter without steaming, worked perfectly and then no need to use Thermoservers.

    Will certainly be cooking this again for the lovely flavour!

    That chermoula is deeeelicious! I used frozen spinach and since there was not much I added carrot and zucchini. All good!


    one thing to note is that the ingredients list does not have mint but the method says when to add it. I just guessed the amount
