Z's Grilled Octopus
- 1kg Octopus
- 1 litres water
- 2 lemons
- 30g lemon juice
- 1 heaped tbsp dried oregano
- olive oil
- sea salt, to taste
- 2 slices lemon, cut in quarters

- 1. Wash octopus and cut into quarters, make sure beak has been removed. Place octopus pieces in top and bottom of Varoma
2. Put water into bowl and the 2 slices lemon quartered
3. Place Varoma into position and cook for 45min/Varoma/speed 2
4. Check that octopus is cooked to your liking and then pour water and add octopus into a Thermoserver or bowl, cover and leave to marinade until you need it. This will make it more tender. I usually do this a few hours ahead. Doesn't matter if the marinade cools down
5. When ready to cook strain liquid from octopus, cut into portions, I usually cut the thicker tenticles in half, and leave to dry while you heat heavy based non stick fry pan or wok
6. Add enough olive oil to cover bottom of wok or approx 100g to fry pan, heat and add octopus, stirring every few minutes until it has absorbed most of the oil
7. Add oregano and stir
8. Add lemon juice, you can put more or less, stir and once it has heated up keep stirring and tossing until it the octopus has absorbed most of the liquid. Turn heat off and place in Thermoserver or cover in a bowl until ready serve
This can also be cooked on a grill plate or charcoal BBQ just watch that you don't burn it as lemon juice can evaporate very quickly before octopus is cooked properly
Serve with Greek Potato salad as main meal, as a mezze plate with drinks or entree

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
