Ingredients

Apricot Chicken

  • 1kg chicken breast
  • 1kg Chicken legs
  • 4 garlic cloves
  • 30 grams olive oil
  • Extra olive oil for frying
  • 1 Packet French onion soup
  • 850 can Apricot Neckar
  • 15 grams Balsamic vinegar (optional)
  • 80 grams plain flour

Recipe's preparation

  1. 1. Chop garlic cloves 3 seconds Sp 6.
    2. Weigh 30g olive oil and sauté 3 mins 100 deg Sp 2.
    3. Meanwhile heat oil in frying pan. Slice 2 cuts into each of the chicken legs and place into frying pan.
    4. Once the garlic is finished add it to the fry pan. Don't wash bowl.
    5. Slice chicken breasts into 6x2cm pieces and place in pan with legs.
    6. Fry the legs and breast until almost cooked through (about 25 mins) meanwhile preheat oven to 180degs.
    7. Once pretty much cooked place chicken in 25x30cm oven dish.
    8. Remove fry pan from heat and add the French onion soup. Using a spatula let the French onion soup soak up the oils and juices from the chicken.
    9. Add French onion soup/chicken flavour to TMX bowl.
    10. Add apricot necktar, balsamic vinegar and flour. Mix 7 mins 90degs Sp 4.
    11. Pour the sauce evenly over the chicken. Cover with foil and bake in oven for 40-50 mins. Take the foil off in the last 10 minutes.
    12. Meanwhile cook rice or mash potato as per the BCB.
    13. Allow chicken to rest for 5 minutes before serving.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
