Ingredients

  • 1 lemon, Rind removed with peeler
  • 4 cloves garlic, Peeled
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Pink Rock Salt
  • 1/4 teaspoon Peppercorns
  • 1 --- handful Italian parsley
  • 230 grams natural yoghurt, See EDC
  • 30 grams oil
  • 20 grams lemon juice, approx 1/2 Lemon
  • 12 chicken drumsticks

Recipe's preparation

  1. Place Lemon Rind in the bowl and Mill for 20 seconds / speed 10.

    Scrape down and repeat until finely grated (approx 3 times)

  2. Add Garlic, Oregano, Salt Crystals, Peppercorns and Parsley and Mill 10 seconds / speed 9

     

    Scrape down bowl

  3. Add Yoghurt, Oil and Lemon Juice and mix for 20 seconds / speed 5

  4. Marinade chicken for at least 30 minutes prior to cooking.  I used a large zip lock bag.  

  5. Bake chicken in a large dish for 45-60 minutes at 180° or until cooked and golden brown on top

Tip

You could steam the chicken in the varoma lined with wet baking paper instead of baking in the oven or BBQ.  

 

Garlic can be adjusted to taste.

    Delicious! Will definitely make this one again. I served it with roasted veges (potatoes, pumpkin, carrot, onion, eggplant, capsicum and zucchini) lubricated with olive oil, rosemary, thyme, salt and pepper).

    I really enjoyed this but my kids complained about them being soggy. I probably should have put them on a roasting rack... Will make again and might try with breasts too. Thanks for sharing.

    Winner of a dish when I finally convinced the children to taste it, then they wanted more but sadly was all gone. Look forward to cooking this simple dish again. I cooked it for 45 minutes on convection oven then turned it to fan forced for the last 15 minutes to brown up.

    I didn’t have enough drumsticks so there was a lot more marinade, should the drumsticks cook in the marinade or be placed on a baking tray with just the marinade on the chicken? thanks

    Smelt devine when preparing the marinate and roasting in the oven.  I didn't get to eat these because of intolerance to yoghurt and garlic. However my fussy five year old loved the drumsticks and ate more than usual.    The rest of the family also enjoyed the but not as much as my five year old.  Thank you for posting your recipe.
