- few sprigs fresh dill
- few sprigs Fresh Flat Leaf Parsley
- 6 spring onions, 2cm lengths
- 1 onion, peeled & quartered
- 2 cloves garlic, peeled
- 30 g olive oil
- 250 g white rice
- 1 bunch silverbeet leaves, washed & roughly shredded
- 2 tbsp lemon juice
- 750 g water
- 2 tbsp TM Vegetable stock paste, or to taste
- Freshly ground black pepper, to taste
- Lemon wedges, to serve
- feta cheese, to serve

1. Place dill, parsley and spring onions into TM bowl, chop 2-3 seconds speed 7, remove and set aside.
2. Place onion and garlic into TM bowl and chop 2-3 seconds speed 7 and scrape down.
3. Weigh oil into TM bowl and saute 5 minutes Varoma Temperature speed 1.
4. Add the rice and saute 2 minutes Varoma temperature, reverse, speed 1.
5. Add water, Vegetable Stock Paste and pepper and cook 10 minutes 100 degees, reverse, speed 1-2.
6. Add chopped dill, parsley, spring onions, silverbeet and 1T lemon juice, stir, then cook 5 minutes 100 degrees reverse speed 2.
7. Tip into ThermoServer, cover and set aside for 5 minutes.
8. Stir in remaining lemon juice, taste, adjust seasoning if necessary and serve with lemon wedges and feta cheese.
Method:
Tip
1. English spinach can be used instead of silverbeet.
2. Mint can be substituted for all or part of the dill.
3. Leek can fully or partially replace the onion.
4. Silverbeet stems can be included in equal quantities with the onion.
5. For a flavour variation, tomato juice or chopped tomatoes can replace some of the water or tomato paste can be added to the water.
