Beetroot relish

  • 500 grams Beetroot, Whole
  • 500 grams vinegar, of your choice (white, ACV)
  • 250 grams sugar, of your choice (white, raw, coconut)
  • 2 teaspoons pickling mix, see tips
  • 1 teaspoons sea salt, pure sea salt

Recipe's preparation

    Cooking method
  1. Peel Beetroot and quarter. Chop speed 5. Scrape down sides of bowl Closed lid"Closed lid" and check for desired texture. Add 125 grams water, cook 10 mins, 80 degrees, Counter-clockwise operation"Counter-clockwise operation" reverse. Set aside.

    Place remaining ingredients into bowl. Cook a further 5 mins, 80 degrees, speed 2.

    Return beetroot to the bowl, 1 min, Counter-clockwise operation"Counter-clockwise operation" reverse speed.

    Fill warm sterilised jars making sure beetroot is well covered with the liquid. Place lids on jars and process hot jars using preferred method - water bath/stove top for 15 mins or Fowlers Vacola as per method for jar size and unit.

Tip

Delicious on baked potato, as a side dish or in sandwichs.

Be sure to use clean utensils and a sterilised jar for preserving to eliminate any unwanted bacteria.

Sterilise jars by placing them in a saucepan of boiling water for 5 minutes. Remove and dry in a low oven. Fill while still warm with hot beetroot mix. Seal immediately with lids.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
