Ingredients

Quince cooking

  • 1000 grams quinces, unpeeled roughly chopped
  • 600 grams water

Draining

  • 1 --- nut bag or muslin cloth, Or Enjo wash bag
  • 1 --- Large bowl, or Pan

Making Jelly

  • dripped Quince juice, 300-500ml
  • raw sugar, Same qty as Quince Juice

Recipe's preparation

    Quince Cooking
  1. Wash and roughly chop 1kg quinces, weigh into TM bowl and 

    6 Sec/ speed 6. Repeat and use spatula to move quinces onto blades until resembles pulp.

     

  2. Add 600 grams Water to TM Bowl, cook 45 mins/ 100c/ speed 1.

  3. Draining of Quince Juice
  4. Pour into Bag Muslin cloth or enjo wash bag and then hang and let drip into bowl for at least 5 hours (preferably overnight) . DO NOT squeeze bag otherwise your jelly will be cloudy. The juice will look milky and won't be clear at this point. 

  5. Making Jelly
  6. Weigh dripped Quince Juice back into TM Bowl. Add same amount of Raw Sugar (between 300-600 Grams).

    Cook 45 minutes/ 100c/ speed 1

    Check for setting, add another 20-30 minutes and if necessary increase temp to Varoma (use basket on top of lid to prevent splattering).

    Pour into sterilised Jar and seal.

    bdecourten: I have the same result a SUPER sweet batch of syrup... not what the recipe suggests. It says 'check the setting' but what should the consistency be? If I cook it any longer it will get sweeter.. did you get any help?

    Burntchops:thank you for tip on using the pulp I strained thro a seive and got heaps so after jelly is done I'm making jam I was hoping to use less sugar in this one, I'll definatly be adding lemon to it.. wish I read this before I thro pulp away fron my paste I made a few days ago.

    Quice jelly worked great thanks. I kept the leftover strained pulp and made jam with it. I put the pulp in a big pot with equal amounts of water, then added about 2 cups of sugar, lemon juice from four lemons and added grated lemon rind from 4 lemons. I boiled it all together for 20mins. Its really nice with the lemon flavour coming through.

    Followed pretty much your recipe (added tiny bit of lemon zest), but after cooking for 2 hrs it still is liquid!? What do I do now?
