Ingredients

Pate

  • 500 g deveined chicken livers (800g prior)
  • 45 g Margarine or butter
  • 1 large onion
  • 1 clove of garlic
  • 1/3 cup thickened cream
  • 1/3 cup Port to soak livers in
  • 1/2 tablespoon Port for the cooking process
  • 1/2 tablespoon of bottled ground Sage leaves (McCormicks / Masterfoods etc)
  • 1/2 tablespoon of bottled Parsley flakes (McCormicks / Masterfoods etc)
  • 3/4 tablespoon of bottled chopped Chives (McCormicks / Masterfoods etc)
  • Juice of just under a half a lemon
  • 2 pinches of salt
  • 6-9 good shakes of ground black pepper

Recipe's preparation

    Preparation
  1. Soak 500g of deveined chicken livers in 1/3 cup of Port for 1-2 hours (the longer the better).

  2. Method
  3. Finely dice the quartered onion and garlic in Thermomix jug using either the turbo or very high speed setting.

     

    Add drained pre-soaked livers, margarine/butter, sage, parsley, chives, lemon juice, 1/2 tablespoon of Port, and salt and pepper into the Thermomix jug and cook on Reverse speed 1 for 15 minutes at 100 degrees.

     

    Finally, add thickened cream and mix on speed 8 for 17 seconds.

     

    Pour pate into ramekins / containers and allow to cool down at room temperature, lid off (cover only with a fly net) for a good hour prior to covering with gladwrap and placing into the fridge to set (24 hours is optimal).

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
