For Jam

  • 200 grams Fresh Apricots, Cut in half, Stone removed
  • 200 grams Fresh Nectarines, Cut in half, stone removed
  • 150-200 grams fresh mango flesh, Skin and stone removed
  • 200 grams raw sugar
  • 1/2 juice of 1/2 lemon
  • 1 green apple cored, Skin on

Recipe's preparation

  1. Method

    • Ensure bowl is clean and dry
    • If using raw sugar, place in bowl and mill. Speed 9, 10 Seconds 
    • Put all fruit in bowl (in total I had 600 grams, and you can put any combination of the fruit (nectarine, mangos, apricots) so if you have more of one than the other don't worry).  Add Apple. Put in bowl and cut. Speed 4-5, 4-6 Seconds.  (I like mine a bit chunky, so watch and chop to your desired consistency).
    • Add juice of half a lemon.
    • Cook for 20 min, 100oC, Reverse, Speed 2.
    • Check to see if set, if not then cook for further 5 min, Varoma, Reserve, Speed 2.
    • Test by placing 1 teaspoon jam on saucer from the freezer. When it cools it will wrinkle when a finger is pushed through the jam if setting point has been reached.
    • Bottle, seal and enjoy.

     

    This recipe is done with low sugar.  As this is the preserver, this jam's shelf life will be less.  If you want it to last longer, increase sugar content.

    Deliciously refreshing, mellow jam, ideal on scones, with custard or with ice-cream.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
