Ingredients
- 300 grams Fine Coconut Flakes
- 1 --- red chilli
- 1 leaf Lime Kaffir Leaf
- 2 centimetre piece fresh ginger
- 1/2 teaspoon Himalayan salt, Or to Taste
- 15 cm Stalk of Lemon Grass

Place red chilli, kaffir lime leaf, ginger, salt and lemon grass into bowl of thermomix bowl. Blend on speed 7 for 20 seconds. Place aside in a seperate bowl.
Place coconut into thermomix bowl. Grind for 4 minutes, temp 50, speed 8. Stop after two minutes and scrape down sides of bowl.
Add the red chilli, kaffir lime leaf, ginger, salt and lemon grass mix. Mix for 10 seconds on speed 3.
Asia Coconut Butter
Tip
Store in an air tight jar. Does not need refrigerating.
Use in soups, Asian Stir Frys, Currys. Also delicious spread onto crackers.
Delicious with fish, chicken or vegetables.
