Ingredients

Chutney

  • 200g red onion, peeled and quartered
  • 1000g fresh juicy vine ripened tomatoes
  • 250g green apples, peeled, cored and chopped into quarters
  • 250g low GI cane sugar (normal sugar will suffice)
  • 200g apple cider vinegar
  • 1 tsp allspice
  • 1 tsp ground ginger
  • 2 whole cloves
  • 100g Sultanas
  • 2 tsps salt

Recipe's preparation

  1. Remove the skin from tomatoes by scoring the base of each tomato with a cross.

    Place the tomatoes in a large bowl and cover with boiling water, and leave for 5 minutes.

    Skins should easily peel away from the cross at the base. Remove hard white 'core from top of each tomato. Chop the peeled tomatoes into quarters.

  2. Place red onion and apple into bowl and chop for 5 seconds, Speed 6. Set aside.

  3. Place tomatoes in bowl, chop for 5 seconds, Speed 5.

  4. Add all other ingredients, including the apple and onion, and mix for 3 seconds, Reverse, Speed 4.

  5. Remove measuring cup and place simmering basket on top to prevent splashes.

    Cook for 60 mins, 100 degrees, Reverse, Speed 1-2.

  6. Increase temperature to Varoma, and cook for another 40 minutes, Reverse, Speed 1-2.

  7. Test the consistency of the chutney by spooning a tablespoon of it onto a dish, then place it in the freezer for 2 minutes. If it's still too watery, prolong cooking for 20 minutes, varoma, reverse, speed 1-2, then check again.

  8. Place into sterilsed, airtight jars while hot. If jars are not airtight, place a square of folded gladwrap over jar opening before screwing on lid. Allow to cool completely and store in fridge.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    Great recipe - did alter a little to suit our less sugar lifestyle - 150g sugar and added 1 teasp tumeric and 2 teasp teaspoon curry powder

    and thickened with a little cornflour

    Worked well !!

    A tasty chutney but next time I would omit step 3 and not blitz the tomatoes so the chutney is chunkier.
