Ingredients
Relish
- 1 teaspoon fresh rosemary
- 2 --- chilli red
- 2 --- Red onions, halved
- 2 bayleaves
- 30 grams olive oil
- 600 grams green kiwi, diced
- 2 teaspoons ground corriander
- 100 grams raisins
- 400 grams Rapadura or Raw Sugar
- 150 grams red wine vinegar

Mill fresh rosemary leaves for 15 seconds/speed 8.
Add chillis and red onions and chop for 6 seconds/speed 5. Scrape down the sides of the bowl.
Add bay leaves and olive oil into the bowl and saute for 15 minutes/100 degrees/"Counter-clockwise operation" ."Gentle stir setting" , or until onions are soft.
Add kiwis, ground corriander, raisins, sugar and red wine vinegar into the bowl and cook for 6 minutes/100 degrees/"Counter-clockwise operation" /"Gentle stir setting" with MC off.
Cook further until the mix has thickened for approximately 50 minutes/90 degrees/"Counter-clockwise operation" /"Gentle stir setting" with the MC off.
Remove bay leaves.
Store in air tight containers or jars.
