Relish

  • 1 teaspoon fresh rosemary
  • 2 --- chilli red
  • 2 --- Red onions, halved
  • 2 bayleaves
  • 30 grams olive oil
  • 600 grams green kiwi, diced
  • 2 teaspoons ground corriander
  • 100 grams raisins
  • 400 grams Rapadura or Raw Sugar
  • 150 grams red wine vinegar

Recipe's preparation

    Relish
  1. Mill fresh rosemary leaves for 15 seconds/speed 8.

    Add chillis and red onions and chop for 6 seconds/speed 5. Scrape down the sides of the bowl.

    Add bay leaves and olive oil into the bowl and saute for 15 minutes/100 degrees/Counter-clockwise operation"Counter-clockwise operation" .Gentle stir setting"Gentle stir setting" , or until onions are soft.

    Add kiwis, ground corriander, raisins, sugar and red wine vinegar into the bowl and cook for 6 minutes/100 degrees/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting"  with MC off.

    Cook further until the mix has thickened for approximately 50 minutes/90 degrees/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting"  with the MC off.

    Remove bay leaves.

    Store in air tight containers or jars.
