lemon spread
- 200 grams lemon juice
- 1 tablespoon cornflour
- 150 grams sugar
- 3 --- eggs, beaten

Beat eggs in a separate bowl.
Put juice into jug. Add 1 tablespoon of cornflour and put on 10 seconds speed 3-4.
Add sugar and put on 3 minutes varoma speed 2-3.
Once finished put machine back on for 2 minutes 70 degreees speed 3-4 leave lid on take out MC and add beaten eggs while machine is on. Then put MC back in and turn speed up to 4-5.
Put machine back on to 3 minutes 100 degrees speed 4-5.
This is like the ETA spread. Can also use it for lemon meringue pie as an idea or a filling for cakes. Very tasty.
Tip
You can add lemon rind at the beginning of adding the juice and cornflour if you wish.

i have made this about 4 times so far. I used limes as I have a healthy lime tree. This recipe is super easy and always turns out perfect!
OMG! This is perfect! I used Meyer lemons so strained the juice before using. I also doubled the recipe and it worked really well. This is exciting for our family as we need dairy free recipes. Thanks for sharing.

Rural aussie: Hi sorry late reply - haven't been on for ages - it would be best to put in fridge after opening but if you put it in the jar hot and do the boil jar it would keep for quite a while - only after you open it, it would have to go in the fridge and be used within a month.
Sounds like a great product.
Can someone tell me how well/ long it keeps. Does it have to be refrigerated before opening, or can it be stored in the pantry till it's opened?
