Recipe's preparation

  1. Blitz sugar and lime zest for 30 seconds, speed 10

  2. Scrape sides down and blitz for a further 10 seconds, speed 10 if you require the zest to be finer.

  3. Add remaining ingredients, cook on 70 for 20 minutes at speed 3

  4. Add an extra 5 minutes cooking time if you like your curd thicker

    I have never made curd before but I had a bag of limes and wanted to use them up. I got the eggs ready and then the butter ready first since they had both been in the fridge. I did the second blitz and also did the extra five minutes - it is not really thick though. This curd packs a punch and tastes good. Now I just need to work out where to use it.
