Recipe's preparation

    Passion fruit skin jam
  1. In a pot on stove, boil passion fruit skins for 1 hour, to soften skins (checking water level may need to top up water).

  2. Once skins are soft drain water and bring up scales on thermomix, put all skins in the thermomix bowl, (you can scrape out soft jelly like from skins but I didn't). Be sure to take note of weight as you will need to put equal part of sugar.

  3. Blitz skins 30sec speed 6 or 7.

  4. Add raw sugar (equal quantity to skins)

    Add 250g/1 cup of red wine (I used Cabernet Merlot) but you can use what you have.

  5. Set 30 minutes, 105degrees, speed 1
    use varoma dish in place of measuring cup

  6. Check consistency, from here I do
    5 min, varoma temp, speed 1
    use varoma dish in place of measuring cup.

  7. Check consistency is to your liking, if so pour into pre prepared jars.
    store in cool dry place
    use within 6 months, store in fridge once opened.

Tip

I adapted this recipe from taste.com

i used the passion fruit pulp to make passion fruit cordial/syrup

This recipe can be halved, just only do 5 min on varoma temp and check consistency.
