Recipe's preparation

    Porcini Mushrooms
  1. Mill porcini mushrooms for 10 seconds, speed 10 to make Porcini dust

    Set aside and add back into bowl 1 tsp of the dust.

  2. Add mushrooms and chop speed 7 for 3 seconds. Scrape down side of bowl with spatula

  3. Insert butterfly whisk

  4. Add cream, whisk on speed 4 until butter has been made. This can take between 1 and 3 minutes

  5. Remove butterfly whisk and strain buttermilk from butter.

Tip

Save the buttermilk for use in bread or soup. The flavour is amazing.

Use porcini dust for additional flavour to risotto or any mushroom dish.

After you have made the mushroom butter, you can immediately use the bowl for a maincourse. Don't waste that beautiful flavour.

I use my mushroom butter as a stuffing in meat, but pop it on a jacket potato, stir through risotto, saute onions with it, this list just goes on and on.

Great for freezing in portions too

    I stuffed some chicken breasts with this butter yesterday and coated them with some breadcrumbs made from sun dried tomato bread.

    the butter melted through (of course) but the chicken was left stuffed with the mushrooms. It was really beautiful,and the butter left the meat really moist.  tmrc_emoticons.)

    What a great idea to put porcini in butter .  Great for my mushroom risotto and many others too to lif th flavour to another level.
