JAM

  • 180 g sugar
  • 200 g Raspberries fresh or frozen
  • 250 g rhubarb, roughly chopped
  • 1 apple, peeled cored & quartered
  • 1 lemon juice only
  • 20 g Vanilla Bean Paste

Recipe's preparation

    Method
  1. Place a small saucer in freezer to test jam

    Place sugar in bowl and blitz 5 seconds speed 10, scrape down sides of bowl.

    Add Apple and chop roughly 3-5 seconds, speed 5, repeat if necessary.

    Add remaining ingredients, combine, 5-7 seconds speed 5. Mixture should still be slightly chunky.

    Cook 10 minutes, Varoma, reverse 1, with simmering basket on lid.

    Scrape sides down and bottom of bowl to avoid sugar burning.

    Cook 10 minutes, 80 degrees, reverse 1, with simmering basket on lid.

    Test jam by placing a small amount on the chilled saucer and allowing it cool. If it firms on cooling it's ready. If still soft cook on Varoma, reverse speed 1 in 5 minute bursts, scraping between. 

    Whan jam is ready, place in to two small sterilised jars.

     

    Note: this is quite a tangy low sugar jam, you can add a little more sugar or add more raspberries and less rhubarb.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
