- 250 g Lotus Spiced Biscuits, from Coles
- 25 g coconut oil
- 25 g vegetable oil, adjust according to preferred consistency
- 25 g brown sugar

Weigh biscuits into the TM bowl. Process at speed 9 for 20 seconds or until fine.
Add coconut oil, vegetable oil and brown sugar and cook for 5 mins at 70 C.
That's it!
Serve on top of ice cream, on toast, on pancakes, whatever you fancy

This is a bit more grainy than store bought Speculoos, but flavour is still nice. Lotus cookies are about $1.80 a packet from Coles.
