Ingredients

Jam

  • 250 grams strawberries hulled
  • 125 grams Rhubarb
  • 45 grams raspberries (fresh or frozen
  • 1 Apple (cut into pieces, skin on)
  • 1 juice of lemon
  • 2 level teaspoons Vanilla beam paste (or pods)
  • 180 grams raw sugar

Recipe's preparation

    To make Jam.
  1. Put saucer in freezer for set test.

    Put sugar in bowl. Mill to caster sugar 6 Sec Sp 10. Scrape down sides. 

    Add all fruit, lemon juice and chop 5-6 sec Sp 5. Scrape down. Should still be chunky.

    Add vanilla paste.

    Cook 15- 20 min, Varoma, Sp 1. Put on reverse if you want the jam to stay chunky (Which I prefer). Place simmering basket in top of lid.

    Check to see if set, put on for additional 5 min if needed.

    Check if Jam is set by placing on saucer from freezer, if it is firm and leaves imprint when pressed, it's ready. 

    Pour into steriled jars.

    Enjoy toast, or with scones and cream. 

    Note: This is a low sugar option and therefore shelf life may not be as long (haven't tried it yet). It is a variation from Tenina.com strawberry jam recipe (with all the extra flavours), as I wanted to try and replicate a Yarra Valley jam recipe I had tasted, only with low sugar. Thanks Tenina.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    Delicious! Thank you for the recipe. I omitted the raspberries as I didn't have any and added a few more strawberries.
