Ingredients

Ingredients:

  • 250 g orange sweet potato, cut into 2-3cm cubes
  • 500 g water
  • 1 spring onion, cut into 2-3 cm pieces
  • 1-2 cloves garlic, to taste
  • 60 g Greek style yoghurt
  • 0.5 tsp curry powder, to taste
  • 1 tsp TM31 Veg. stock concentrate, to taste
  • Flatbread, vege sticks or crackers

Recipe's preparation

    Method:
  1. 1.  Place sweet potato cubes into simmering basket and water into TM bowl and cook 20 minutes Varoma temp. speed 1.

    2.  Remove simmering basket and allow sweet potato to cool. 

    3.  Tip water from TM bowl, rinse with cold water to cool, then dry.

    4.  Place spring onion pieces into TM bowl and chop 5 seconds speed 7.  Set aside.

    5. Place garlic into TM bowl and chop 5 seconds speed 7.

    6.  Add cooled sweet potato to TM bowl and process 10-20 seconds speed 4, scraping down if necessary.

    7.  Add yoghurt, curry powder and vegetable stock concentrate and mix 10-20 seconds speed 3, scraping down if necessary.

    8.  Adjust seasoning to taste before transfering to a serving bowl and serving with flatbread, fresh vegetable sticks or crackers.

Tip

May be used served as a Dip or Spread.


Store in a covered container in the fridge.

    Great tasting dip!

    Just a minor issue with the recipe, it says to set aside the spring onions but then doesn't say to add back in. I just kept the spring onions in the TM bowl while I chopped the garlic.
