Ingredients
- 350 g Jerusalem artichokes
- 3 cloves garlic, whole, peeled
- 180 g baby kale, stems & leaves
- 50 g parmesan cheese, cut into cubes
- 40 g mayonnaise
- half lemon, juiced (no pips)
- 1 handful fresh parsley or coriander leaves, (optional)
- freshly ground black pepper, to taste

Pre-heat oven to 190 degrees C. Scrub and dry artichokes. Do not peel. Chop them into equal size chunks so they cook evenly. Add to a roasting dish with the garlic, spray with olive oil spray or rub with oil and bake in pre-heated oven for 20-25 minutes or until the artichoke is tender when tested with a sharp knife.
Add the parmesan cheese to the TM bowl and grate for 10 seconds on speed 8. Remove from the bowl and set aside.
Rinse out the TM bowl and add 500g water. Place the baby kale into the Varoma receptacle and place the lid on top. Steam cook for 10 minutes at Varoma, speed 1 until wilted. Remove the Varoma receptacle and pour out the water from the bowl.
Add the roasted artichokes and garlic, grated parmesan, lemon juice, coriander or parsley leaves (optional) and freshly ground black pepper to the TM bowl and mix on speed 5 untll well combined. Serve warm with crusty bread and vegetable sticks. Enjoy!
Tip
This is a very tasty and nutritious dip! It is low GI owing to the Jerusalem artichokes, and a great source of fibre, antioxidants, vitamins and minerals. It is also very low in fat. So enjoy it guilt-free, just watch what you dip into it
Variations: You could use spinach instead of kale in this recipe. Spring onions would also go well as an additional ingredient (try reducing the kale to 130g and adding 50g spring onions). Kale has a reputation among nutritionists as the healthiest green vegetable, so I'm always trying to find a way to include it in recipes.
