Ingredients
Mixed Vegetables
- 1/2 c --- carrot, peeled and diced
- 1/2 c swede, peeled and diced
- 1/2 c pumpkin, peeled and diced
- 1/2 c parsnip, peeled and diced
- 1 tablespoon red lentils thoroughly washed and drained
- 1 c low fat milk
- 1 pinch nutmeg, grated
- Freshly ground black pepper

Add vegetables, lentils and milk to Thermomix bowl. Cook at 100o for 20 minutes (or until tender) on "Gentle stir setting"
Drain mixture and reserve liquid. Sprinkle vegetables with nutmeg. Blend for about 10 seconds on speed 8-10, adding cooking liquid as necessary to make the mixture like smooth mashed potato. (May insert butterfly if you prefer to mash the vegetables - I didn't use butterfly and was deliciously smooth and tasty.
Season to taste with freshly ground pepper.
