Ingredients
The Rice
- 900 g water
- 200 grams Cup Medium Grain Brown Rice
The Dressing
- 45 gram soy sauce
- 20 gram lemon juice
- 50 grams cup Extra Virgin Olive Oil
The Rest
- 1/2 red capsicum, Diced
- 130 grams Cup Unsalted Cashews
- 30 grams spring onions, (1 stick cut into 5 pieces)
- 5 grams parsley, leaves
- 65 grams currants, Or Craisins/Cranberries

- The Rice
Add 900 mls of Water to Thermo and cook Medium Grain Brown Rice in Simmering Basket on 100C, speed 4 for 30 mins.
The rest and the Dressing
Dice Capsicum and set aside
Add Parsley and Spring Onions to mixing bowl and chop 3 seconds speed 7, scrape down and add soy sauce, lemon juice and olive oil. Mix 10 specs "Counter-clockwise operation" speed 5
Once the Rice has totally cooled, add Cashews, currants and capsicum and thoroughly fold through the Rice.
Pour over your Dressing in and fold through the Rice mixture
VERY IMPORTANT:
FINISH THIS RECIPE THE DAY BEFORE YOU INTEND TO EAT IT, I CANNOT STRESS THE AMAZING DIFFERENCE IN FLAVOUR FROM THE FIRST DAY TO THE NEXT.

Use Gluten Free Soy Sauce to create this dish GF.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
