- 125 grams Red Quinoa
- 150 grams Broccoli, roughly chopped
- 50 grams kale leaves
- 50 grams almonds
- 1/2 Red onion, roughly chopped
- 1.5 heaped tsp Whole grain mustard
- 20 grams apple cider vinegar
- 20 grams olive oil

1. Rinse quinoa well in a fine sieve under running water for 1-2 mins and then add to the simmering basket
2. Add 500mls water into Thermomix bowl and cook for 20 mins, varoma temperature, speed 4
3. Remove simmering basket and set aside to let quinoa cool
4. Rinse and dry Thermomix bowl
5. Add broccoli, almonds, red oninion, whole grain mustard, apple cider vinegar and olive oil to the Thermomix bowl and mix on speed 4 for 5 seconds (you may need to scrape down and chop again but be careful not to turn it to liquid!)
6. Stir through cooked quinoa and kale leaves and serve
Tip
If the quinoa you are using has a bitter taste you can soak in a bowl of water overnight prior to cooking to remove bitterness.

the kale is raw. I have used fresh spinach leaves instead at times (if no kale on hand) & it tastes great too.
Is the Kale raw or cooked. I can't see any reference to the kale until the end.

Delicious! I subbed out the onion and added the same measure of cranberries. I thought these balanced the dressing which is the perfect blend of sharp and spicy!

I did make mine in the TM31 & the water had boiled away by 20mins, so maybe extra water or less time?

Deliciously Yummy Salad. I added garlic, capsicum and basil for some extra flavor.
We found this salad to be a bit dry and probably needed another flavour as well. Next time, I will process the almonds first before the broccoli etc and add some feta as others have suggested and probably make a bit more dressing. We ended up using leftover salad on a salad roll which worked quite well. Thanks for the recipe.
The whole family enjoyed this salad!
