Ingredients

Thermomix middle eastern potato salad

  • 1000 grams potatoes, (desire, kipfler or dutch creams work well in salads)
  • 1 Chorizo sausage, sliced
  • 1 red onion, sliced
  • 1 bunch Parsley leaves
  • 1 --- tin cannellini beans, (400gram can, drained and rinsed well)

Dressing

  • 200 grams Mayonnaise - made from Every Day Cookbook, (or good quality whole egg mayonnaise)
  • 1 tablespoon chorizo fat, reserved from cooking
  • 1 teaspoon sweet paprika, ground
  • 1 teaspoon cumin seeds ground
  • 1 teaspoon coriander ground
  • 1 teaspoon sherry vinegar
  • 1/2 teaspoon sambal oelek, (or more if you like spicy)
  • sea salt and pepper, to taste

Recipe's preparation

    Thermomix middle eastern potato salad
  1. Put 500 gram of water into the Thermomix bowl.  Wash and dice about a kilogram of potatoes (it's up to you whether you peel them or not, either way works fine). Try to keep the size of the dice roughly the same, (around 3cm is good).  Place in the top tray of the Varoma and steam for 20 - 30 minutes, at Varoma temperature, on speed 2.  The potatoes should be cooked through, but not falling apart.  Cool completely  and place in a large bowl.  

     

    In a small fry pan, cook the chorizo on both sides until crispy.  Set aside and reserve about a tablespoon of the fat from the pan.  Cool, then cut the chorizo rounds in half. Add to the potato along with the cannellini beans.

     

    Rinse the Thermomix bowl, dry and add the parsley. Chop for 4 seconds on speed 6. Add to the potato.

     

    Now make the mayonnaise either in the Thermomix as directed in the 'Everyday cook book' (or buy a good quality whole egg mayonnaise).  In the Thermomix bowl mix the mayonnaise with the spices, sambal oelek, chorizo fat, sherry vinegar and seasoning, 20 - 30 seconds on speed 4.  You may need to scrape the sides to make sure the mayonnaise in blended with the spices well.

     

    Finally, add the mayonnaise dressing to the potato mixture and gently fold through taking care not to break up the potatoes and cannellini beans too much.  Place in a large salad bowl or on a platter.  Cover (refrigerate if necessary) and serve at room temperature when desired garnished with parsley leaves.

     

Tip

You can pre make this even a day before, so it is perfect for a picnic or entertaining.   In fact I think the flavour improves with time!

    ABSOLUTELY DELICIOUS !! .... but I forgot to add the red onion cos it doesn't mention that in the Directions .... but still tasted AMAZING !! .... I like my potato salads a little smooshy so I carefully mixed the potatoes, chorizo and dressing, etc together while they were still a little warm .... I didn't have any sherry vinegar so used red wine vinegar instead .... I also only used a tiny bit of Sambal Oelek and added it to the mayonnaise to taste after I'd mixed the dressing .... and I doubled the quantity too by utilising the basket to cook some of the cubed potatoes in .... just took a little longer to cook .... thumbs up from everyone who tasted it .... will definitely be making again 😃

    It is delicious Cathy, you'll have to try it..  I've been making this for about 8 years now (in fact the very first time I set out to invent this spicy potato salad was in Innaloo - Perth, my home town, but not thermo!).  I have to say it's a whole lot easier and more wholesome when made in the Thermomix.  My kids love leftovers in their lunch box.
