- 500 gram raw beetroot, rinsed & scrubbed, roughly chopped
- 2 medium onions, skinned and halved
- 2 Granny Smith Apples (peeled), and quartered
- 1 1/2 litres chicken or vegetable stock, (3Tbsp TM stock +1 1/2 L water)
- 2 star anise
- 5 chives, fresh
- salt and peppee
- 1 tablespoon natural yoghurt
- 1 tablespoon olive oil, for sweating the onions

1. Place onions into Thermomix bowl and chop 3 sec on sp7.
2.add olive oil and cook 3 min / 100 degrees/ sp1
3. Add beetroot and apple and chop 3 sec/ sp6
4. Add stock (+incl water if using TM stock), salt and pepper, and star anise and cook 15minutes/ 100degrees/ sp 2.
5. Remove star anise. Then puree for 1 min/ slowly turing to speed 9 to prevent hot spurt.
6. Serve with swirl of yogurt and chopped chives.

Was that meant to be one and a half litres? I couldn't fit that all in and red drops all over the bench even before the pureeing
This is a very thin soup but still delicious. I couldn't put the total amount of water into the mixing bowl because it would have been well above the maximum line. When I went to blend the soup after cooking liquid tiny amounts sprayed out of the top, despite turning it slowly to 9 as the recipe dictates, leaving red spots on my wall!! I put a cloth over the top to contain the splashes during the blend.
