Ingredients

  • 1 long red chillies, (deseeded)
  • fresh ginger piece 2cm
  • 1 litre chicken stock (salt reduced), Massel Brand if I buy stock
  • 1 tablespoon Kepas Manus, (Sweet soy sauce)
  • 3-4 Chicken thigh fillets, thinly sliced
  • 120g CHANGS Egg Noodles, (2 bundles from a pack of 3)
  • 2-3 bunches bok choy, cut in to 2cm strips
  • red capsicum, (sliced)
  • spring onions, (sliced)

Recipe's preparation

    Chicken Soup with Bok Choy
  1. Turbo for a few seconds to blitz ginger & chilli.

    Add stock & Kepas Manus. 100 deg, speed1, 8 min

    Add chicken. Counter-clockwise operation"Counter-clockwise operation" 100 deg, speed 1, 5 min

    Add Bok Choy & Noodles. Counter-clockwise operation"Counter-clockwise operation" 100 deg, speed 1, 5 min

    After approx 2 1/2 mins i increase speed to 2 to mix Bok Choy through.

    Serve & Garnish with Spring Onions and Capsicum.

    Thanks for all the great comments and feedback. As time moved on from when i first uploaded this recipe i ahve started to use my own 'home made' chicken stock.

    In the past few weeks i've become a proud owner of a spiraliser! and now make zuchini noodles to replace the egg noodles - I may be biased, but i think it tastes even better now.  Just make the zuchini noodles, place in each bowl, and pour over the cooked soup. The zuchini noodles cook in seconds!

    Quick, Easy & Delicious for the whole family.

    I've been waiting to make this recipe and harvest my bok choy from my veggie patch, it was absolutely yummy and would make a great entree at a dinner party however i had one large bowl for dinner and my husband loved it so much he ate 3 bowls.
