Ingredients

Chinese Chicken and Sweetcorn Soup

  • 1 Brown onion in half
  • 1 Garlic clove, peeled
  • 10 g Ginger fresh, peeled
  • 25 g olive oil
  • 1 level teaspoon turmeric
  • 1 level teaspoon Sweet chilli sauce
  • 700 g Chicken bone broth
  • 20 g Vegetable stock paste
  • 200 g Cooked chicken (diced)
  • 840 g 2x 420gm tin creamed corn
  • 1 level teaspoon fish sauce
  • 1 level teaspoon soy sauce
  • 2 eggs
  • 2 tbsp Corn Flour

Recipe's preparation

    Method
  1. Place onion, garlic and ginger into bowl and chop 3sec/speed5.
    Scrape down, weigh olive oil into bowl and saute 5min/120deg/speed1.
    Add turmeric and sweet chilli cook 2min/120deg/speed1
    Add bone broth, vegie stock, chicken and tinned corn and cook 15min/100deg/reverse/speed1
    In measuring cup put cornlourin and add water to just over 50mls, stir and add to bowl. Cook 3min/100deg/reverse/speed1.
    Whisk eggs in a small bowl, with measureing cup on set speed to 2/Reverse and tip egg into lid. Allow egg to drip into soup.
    Serve hot with Coriander, sliced red chilli and spring onion.

Tip

This recipe came about using left overs. I used left over roast chicken you can use type of cooked chicken. Substitute bone broth for chicken stock paste.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
