Ingredients

Crackers

  • 200 g almonds
  • 25 g olive oil
  • 1 Lge Egg
  • 2 tbsp mixed dried herbs, Oregano, rosemary, marjoram etc.
  • 1/4 tsp sea salt

Recipe's preparation

  1. Preheat Oven to 180degC.

    Add almonds to bowl and mill 10sec/speed 7

  2. Add remaining ingredients in mixing bowl and mix 5 sec/speed 5.

  3. Roll out dough between to Thermomats or baking paper to around 6mm thick.

  4. Remove top Mat or Paper and using the back of a butter knife divide the dough in to pieces 3cm squares.  (Don't worry about seperating the crackers now, they will be seperated after baking.)

  5. Lift Thermomat or paper onto oven tray and bake for 10-15 minutes, or until golden brown.

  6. Allow them to cool before breaking into individual crackers.

Tip

These crackers will keep in an airtight container for 3-5 days.

Mix it up with different herbs and spices.

    I absolutely love these. I made a batch last night with almond meal that I needed to use up. I used garlic powder and salt then sprinkled them with sesame seeds. They were so delicious I ate half of what was meant for a dinner party tonight. So, I made another batch! This one with almond meal from a pack and leftovers from almond milk. (Love that I have found a great recipe for that!) More garlic powder, chilli flakes and salt. They will be a hit for sure!!

    These are very quick and easy to make. I used a rolling pin that had a 6mm guide, but thought they were too dense. I'll give these another try. I think they might be a winner if they were thinner.

    Lovely flavour. They need to be rolled out really thin and cooked for about 25 mins otherwise they are too soft. Well worth making again.

    These were great Kristy, thanks for the share. Mine were a bit on the thick side so I'll roll them better next time. I love that they are so quick and no nasties. They were a save after forgetting to buy crackers for a cheese plate last night! Endless variations as well.

    These are really quick and easy to make.  They're not super strong, but they're not crumbly either.  Perfect for when you wake up in the middle of the night and remember you had promised to bring a dip and crackers to a party the next morning.  Or so a friend tells me tmrc_emoticons.;)
